  • Sour Ale w/ Raspberry, Blackberry, Pineapple & Lime

    6.3% ABV, 35 IBU

    What does an Angry Unicorn look like you may ask? We’re not sure, but we would likely know it when we see it! And trust us we probably don’t want to see it, however we would have to think if angry enough it explodes into something really good. Like maybe a fruited sour beer?!?!?! This sour ale has a very tart base with massive additions of Raspberry, Blackberry, Pineapple & Lime. Pucker up. After all, it was an Angry Unicorn!

  • Scottish Ale/Wee Heavy

    7.8% ABV, 32 IBUs

    This is a style we love to make and drink! We use Golden Promise malt from the UK with a dash of roasted barley for color. Then we boil the hell out of it to create kettle caramelization that brings out toffee, burnt sugar, and some light smoky flavors in the finished beer. It’s finished off with Fuggle hops to provide some nice earthy, floral aromas. That’s a lot of explaining…Does Anyone Care? 

  • Blonde Ale

    4.5% ABV/27 IBU

    “I usually drink…what should I get?” Well, here’s your answer. A simple, one size fits all Blonde Ale that balances form and function. Just like a good SnapBack. Enough said.

  • Amber Ale

    5.6% ABV/ 32 IBU

    A guy, who shall remain unnamed, likes Amber Ales so much that he spends part of his anniversary (yes, that anniversary) making beer in someone else’s garage! True story. And for the record his wife’s name is not Amber. We use a combination of Munich, Caramel, and Chocolate malts to bring a rounded, not too sweet flavor that balances out a hint of bitterness and herbal notes from Perle hops.

  • Hazy IPA

    6.2%/46 IBU

    The first beer we produced on our 1 barrel system…”About F’n Time” was the phrase uttered when it was done. And a name was born! We use flaked oats and unmalted wheat (along with some simple chemistry hocus-pocus) to create a soft, hazy version of an IPA. For this variation, we used large amounts of Dolcita, Vera and Vic Secret for citrus, tropical, and stone fruits aromas and flavors.

  • Double Dry Hopped IPA

    7.0% ABV / 64 IBU

    Duee is his name…DuJuice is his game. This guy loves IPA’s and Citra hops! So we made an IPA with him that includes Citra in the boil, Citra in the whirlpool and lots of Citra in two dry hop doses!!!!! So this one has big citrus flavors and great floral aromas to balance out a higher bitterness. 

  • Irish Stout / 4.9 % ABV / 37 IBUs

    To the doubters and non-believers or sometimes the ones that aren’t quite sure if something will work or don’t believe in it, then decide it’s a good bit of humor…Yep, that’s us. We’re The Skeptical Pessimist, but in a good way. So here is our take on an Irish-style Stout that is dry, roasty, and drinkable with spicy, floral hop notes.

  • Cream Ale w/ Saaz Hops

    4.3% ABV, 14 IBU

    Crisp, breezy, and impossibly refreshing, this easy-drinking cream ale is the beer equivalent of someone yelling "the pool's open!" on the first warm day of the year. Soft and smooth with a pale straw colored pour, it's brewed to be effortless — light malt sweetness balanced by the delicate floral and herbal whisper of Saaz hops. No pretense, no agenda, just clean lager-like drinkability in an ale's body. Made for backyard chaos, bare feet on hot concrete, and the kind of afternoon that turns into evening without anyone noticing.

  • Pre-Prohibition Dark Lager

    5.0% ABV / 31 IBU

    Made in partnership with Rock County Historical Breweries, Bars & Saloons. This Pre-pro style lager recreates ‘Janesville’s Celebrated Lager Beer’ from the days of Louis F. Knipp Brewing at the historic Janesville Northside Brewery location.

    A portion of the proceeds goes back to RCHBBS for support in their continued effort to unearth this historic site.

  • Seltzer

    5.0% ABV/0 IBU

    Indeed we make it. We use a combination of yeast by starting with a Norwegian strain that provides tropical fruit flavors and then finish off the fermentation with champagne yeast to provide a nice balanced, dry finish. This seltzer can be consumed in its ‘raw’ form, meaning we don’t add any fruit or flavorings to the base. Or you can add one of our house made simple syrups to up your flavor game.
